Pony: Soup

Maybe it is the cold weather, but I am really into making soups these days. Specifically, stock.

I feel like a witch throwing in bones and handfuls of herbs and broken vegetables and stirring the cauldron as the water sucks in flavour and becomes more than the sum of its parts.

Sunday I bravely went to the butcher and asked for bones for stock, but when I got home, I balked at the barbarism implied in hacking the bones down to size. But if I am going to eat meat, I should be able to brave the icky implications, right?

Kiff helped me out. We roasted the bones in the oven and threw them into the pot with leeks, dill, carrot, onion, bay leaves, black pepper, and celery and a few other things.

Next I think i will learn to make a really good vegetable stock.

So far I have made: Lamb and root vegetable soup and Nigerian Yam soup.

Next project: borscht.
