Greek tofu scramble

Green onion sauteed in olive oil. Add crumbled firm tofu, oregano, a handful of chopped spinach. Chopped clove of garlic. One tomato diced. pitted kalamata olives. Feta cheese. Salt and pepper. A bit of lemon juice.

Grilled mediterranean eggplant

slice a couple of asian eggplants into thick rounds and marinade them for at least 15 minutes in olive oil and garlic and lemon juice. Bake in oven on a cookie sheet at 350, checking frequently to make sure they don't burn. When they are soft and crispy around the edges, take out of the oven and garnish with fresh chopped mint if you have some around.

Serve with greek yogurt and some toasted pita or tortilla.

Tastes good either hot or cold.
