"Sandwiches are beautiful, Sandwiches are fine. I like sandwiches, I eat them all the time; I eat them for my supper and I eat them for my lunch; If I had a hundred sandwiches, I'd eat them all at once."
This was one of my favourite song's as a kid. BUT I really didn't like sandwiches! My mom used to pack them in my lunch everyday and I think I was really awful and threw them away in favour of munching my apple and pretzels or other snacks. (No wonder I ran home starving and wolfed down a stack of fake oreos with a big glass of milk!) The only kind I really liked were turkey sandwiches with mustard on rye. The PB&J and tuna, while foods I (still) eat and like, never tasted good after sitting in my lunchbox all day. The truth is I like my sandwiches toasted and freshly stacked.
Lately, I have been obsessed with avocado sandwiches. It seems Pat is a fan too as he lists them often so I thought I would post my latest concoction:
- 1 slice toasted bread ( I go for the Shasha spelt kind, the dude opts for a bagel.) - A thin layer of dijonnaise (this rocks my sandwiched world) - 1/4 thinly sliced very ripe avocado - 2 thin slices of vine tomatoes - 2 thin slices of english cucumber - 1 slice swiss cheese (optional) - Top with a final slice of toasted bread.
Cut in half, and dig in. Also delicious with potato chips or pickles and olives on the side.
